This is an outfit thing, isn't it? You don't have to start as a Gadabout. It all depends on what skills you want to have and then becoming a Sage once you've maxed out your current class.

Gadabouts only need to be Lv.20, which is neat if you're looking to get a Sage early. Otherwise you have to be Lv.20 and have a Word of Wisdom available, and there aren't many of those in DQ3.

I don't see anything wrong with having a custom outfit combining both Gadabout and Sage and maybe even having a few additions and personalizations that Cib would love.

But would Cib really be suited to being a Sage?

Sages are quite versatile with magic and Cibryll loves magic, doesn't she? Also they're the best healer you can ask for, and I highly doubt Cibryll would let herself and her allies take severe damage on the battlefield.
